In my humble opinion, in a serious coffee shop, your coffee will not be sold to the uncle wearing a big vest and fanning a big cattail leaf fan in the residential building around your shop; It's not for aunts who dance in groups every day. It is not a group of pseudo-white-collar workers who sell to the office building next door for three or four thousand yuan a month and are still busy with their lives and houses.

Coffee is an exotic product, which has no foundation in China. People who can accept it, like it, care about quality, and will always consume it must be in the forefront. If you want to open an independent coffee shop, you must first know who the real audience of coffee is.

The first one: spend money on seats, don't care about the environment and don't care about the quality of coffee.

This kind of guest will never be a frequent visitor to the cafe. They may drink little or no coffee. The characteristic of these people is that they basically don't order coffee, and more often they drink other drinks. Even if you order coffee, just taste it, or stir it in the milk coffee with a stirring stick. For them, a cup of coffee, even if it is only 20 yuan, is not cost-effective, because they can spend 15 yuan to buy a cup in a nearby teahouse and drink tea all day. Therefore, in order to attract these guests, coffee must not be the main item in the coffee shop menu, and the meals should not be desserts and western food, but beef noodles and mixed rice. Then the coffee shop is no longer a coffee shop. Can you imagine that a coffee shop is full of strong flavor of Sichuan style stew pork and 1: 1 rice?

The second type: spend money to buy seats, care about the environment and not care about the quality of coffee.

I know a coffee shop with many such guests. In order to survive, such a coffee shop must meet two conditions. The first condition, if you are in the business circle and have mainly done highway passenger transport business in places like Chunxi Road, you don't need to repeat customers. If there are no competitors in the CBD business circle, the surrounding business people can only choose to come here to talk about business or work, but if a store with similar or better environmental quality is opened nearby, a large number of customers will be lost immediately, because such a store has no core competitiveness. The second condition is that investors are super rich. Opening such a store requires expensive decoration expenses and high rent in the early stage. Don't even think about it without millions.

The third type: spend money to buy seats, care about the environment and care about the quality of coffee.

Most of these guests are high-income groups and have long been accustomed to spending hundreds of dollars per capita. For them, if they are willing to spend 30 yuan on a latte, they are willing to spend 40 to 50 yuan on a cup of COE-level hand-brewed coffee. In order to keep them, cafes must have a corresponding level of environment, service level and product quality. Such guests are definitely high-quality customers, and the return rate will be high. If you can attract them, it is not impossible for them to spend money every day.

The fourth type: you don't need a seat, you don't care about the environment, you just care about the quality of coffee.

For such guests, coffee is just what they need. They may not care much about what they eat, but a cup of ESP or hand-made coffee every day is a must. For such a guest, as long as your coffee can conquer his taste buds, it doesn't matter how big the decoration area is, even if you drive in a private house outside the Third Ring Road, he will come.
