Sheep's head in white water, stewed and cooled sheep's head in white soup, cut into thin slices, sprinkled with pepper salt, and served with white wine, is a masterpiece. The most delicious parts are the sheep's face and tongue. However, it is not very popular nowadays because of the heavy stench, but I can't forget this bite. There are a few places in Beijing that make good white-water sheep's head: Li Ji on Baiqiao Street, the aforementioned Yue Sheng Zhai, and the big restaurant Bai Kui Lao. Of course, the halal supermarket on Ox Street sells it well too.
