Jinggangshan red rice wine is a kind of rice wine with low alcohol content. In wartime, red rice wine was called "Red Army Coke" for a reason. Redmi, also known as rouge rice, is the best in Redmi series. It is warm and fragrant when cooking porridge. The research record of Jinggangshan red rice wine originated in Song Dynasty, which is the indigenous brewing technology of some Hakkas in Jinggangshan and Suichuan. Its main raw material is Redmi planted and harvested in the unique local alpine and water-cooled environment, supplemented by local mountain spring water, and made by traditional technology. It is one of the self-sufficient rice wines for local people to entertain guests.
Brewing technology of red rice wine
Redmi, high-quality glutinous rice, spring water and natural plant distiller's yeast are selected as raw materials, and a thousand-year-old traditional ceramic jar brewing process is adopted, and alcohol, pigment, preservative and thickener are not added, so it is an authentic natural green drink. The alcohol content is 7%- 12%(V/V), which is suitable for people of all ages.
Almost all families in Hakka area will brew red rice wine. Redmi and glutinous rice are soaked in a big water tank, washed, then picked up, drained and steamed in a big rice cooker. After that, the rice retort was moved to a big pottery bowl, and half a bucket of cold water was poured to promote the cooling of the rice. Then, put the rice in retort into the wine jar. When the temperature drops to about 20 degrees, stir the wine cake evenly, and then stir the rice repeatedly. Then, level the rice, dig a small well from the center of the rice, cover the barrel, and move it into a bamboo basket filled with straw for heat preservation and fermentation.
