Is it healthy to eat things baked in the oven?
Healthy, the cleverness of the household oven lies in that the food will not directly contact the heat source, there is no oil smoke, and the temperature control is convenient, and the heating is quite uniform, which will not cause the local temperature of the food to be too high. Therefore, generally, as long as the temperature of grilled fish does not exceed 180℃~200℃, and the time is appropriate, observe and adjust the temperature at any time to avoid burning the surface, there is no need to worry about carcinogens (or there are few carcinogens of heterocyclic amines and polycyclic aromatic hydrocarbons). Studies have found that the benzopyrene content of mutton kebabs roasted in the oven is only one-tenth to one-tenth of that roasted with charcoal fire, which is far below the hygienic standard of smoked and roasted animal food. On the contrary, traditional cooking methods such as frying, if the temperature is not properly controlled, will still cause local burns and produce carcinogens. Furthermore, the temperature set in the oven refers to the temperature of the hot air in the oven, and the hot air can only touch the surface of the food. In fact, the internal temperature of food is much lower, so a "bumper" is added. In addition, if food is wrapped with tinfoil, lotus leaf and other coats before baking, carcinogens will be further reduced. Because this can leave the lost water between the fur and the meat, forming a gap filled with hot steam, making the food have the heating effect of steaming and baking, and the temperature is not easy to rise excessively, thus reducing the generation of carcinogens.
