Method for making garlic Chili sauce

2. Wash the peeled garlic first, soak it in clear water for five minutes, and then peel it, saving time and effort. Chop garlic or put it in a cooking machine to keep it granular. I hit it with a cooking machine.
3, millet pepper is also cut into small pieces and then put into the cooking machine to break. It is much more convenient to have a cooking machine. If you have rubber at home, it is recommended to wear rubber, because it is really too spicy, and disposable gloves are easy to get spicy when they are broken.
4, pour more oil, the oil has just passed the minced garlic, and the oil temperature is 70% hot and put in garlic! Stir-fry slowly on low heat until you smell garlic;
5, pour in the pepper and stir fry, also use medium and small fire, do not have to stir fry all the time, you can stir fry every once in a while, because the pepper will come out;
6. Cook for 20 minutes before adding salt. Pepper has no fishy smell, so I have more salt here than cooking. You can put less salt if you like. This is mainly for taste;
7. Then pour in the right amount of oil. The amount of oil should not exceed that of Chili. If there is more oil in Chili sauce, it will not go bad so easily, but if you don't like too much oil, you can keep it. After draining the oil, turn to medium heat and stir until you see the oil bubbling, then turn off the fire;
After taking out of the pot, put it in a quickly sealed glass container, store it in cold storage, and use a separate clean waterless spoon when eating.
