Is freshly squeezed fruit and vegetable juice healthier?

In summer, many people like fruit and vegetable juice, especially freshly squeezed fruit and vegetable juice, which makes people feel healthy and safe. However, the US Food and Drug Administration recently issued a consumption reminder not to drink too much freshly squeezed fruit and vegetable juice!

Freshly squeezed fruit and vegetable juice refers to fresh fruit and vegetable juice that can be directly drunk after being squeezed.

At present, there is no relevant national standard in China. In 20 15, Zhejiang Province promulgated the local food safety standard "Fresh Fruit and Vegetable Juice and Cereal Beverage" (DB 33/3005-20 15), which stipulated that "Fresh Fruit and Vegetable Juice" refers to fruit and vegetable juice made from fresh fruits and vegetables on the spot and directly consumed by customers after being squeezed. Drinks made of thick pulp, concentrated juice and fruit and vegetable powder are not included. Fresh-squeezed pure fruit and vegetable juice only uses fruits and vegetables as raw materials, and does not add any auxiliary materials, which is called fresh-squeezed mixed fruit and vegetable juice. Appropriate amount of auxiliary materials such as drinking water, honey, sugar, etc. that meet the relevant food safety standards are added, and no thick pulp, concentrated juice, fruit and vegetable powder and food additives are added. For such products, consumers should pay attention to the following issues:

Freshly squeezed raw materials should be fresh and the processing process should be hygienic.

The raw materials of freshly squeezed fruit and vegetable juice must be fresh, without rot, mildew, moth-eaten, damage, etc. The water for making freshly squeezed fruit and vegetable juice should be bottled drinking water, water treated by water purification equipment in accordance with relevant regulations or domestic drinking water cooled after boiling. Because there is no sterilization link in freshly squeezed fruit and vegetable juice, it is necessary to ensure the full cleaning of raw materials and the thorough cleaning and disinfection of used utensils before processing, so as to ensure the health and hygiene of operators and minimize the risk of microbial pollution.

Fruit and vegetable juice can't completely replace fruits and vegetables.

Although cloudy juice, represented by orange juice, retains pulp and soluble dietary fiber, compared with fresh fruits and vegetables, most fruit and vegetable juice products lose a lot of dietary fiber, and some beneficial components are discarded together with fruit residue because they cannot be dissolved out in time during juicing. In addition, fruit and vegetable juice can improve the human body's absorption of some nutrients such as vitamin C and B vitamins and potassium, and can also promote the intake of some fresh fruits and vegetables with bad taste, but the absorption effect of nutrients in tomatoes is better after cooking. Therefore, fruit and vegetable juice can not completely replace the daily intake of fruits and vegetables, but only an integral part of a balanced diet.

Juice should be squeezed and drunk now.

Fresh fruit and vegetable juice drinks should be served immediately and should not be served every meal or overnight. If stored at 10~60℃, the time from production to supply should not exceed 2 hours. This is not only conducive to maintaining the nutritional components and fresh flavor of fruit and vegetable juice, but also conducive to controlling the growth of microorganisms and making drinking safer. Therefore, freshly squeezed fruit and vegetable juice should not be stored for too long, and it is recommended to squeeze and drink it now.

Non-qualitative change of browning of fresh fruit juice

After juicing, the cell structure of fruit and vegetable juice is destroyed. Polyphenols and polyphenol oxidase in fruit and vegetable juice will accelerate the oxidation reaction to generate brown substances when exposed to air, which will lead to discoloration of fruit and vegetable juice, but this does not mean deterioration. Browned fresh squeezed fruit and vegetable juice can still be drunk in a short time without affecting the safety of fruit and vegetable juice.

The consumption of freshly squeezed juice is risky.

The US Food and Drug Administration (FDA) requires that freshly squeezed fruit and vegetable juices sold in juice shops and farms must be refrigerated and labeled with warning labels. Because these products may contain harmful bacteria without sterilization, there is a risk of food-borne diseases for children, the elderly and high-risk groups with weak immunity. Therefore, it is best for these people not to drink freshly squeezed fruit and vegetable juice, but to heat and sterilize it before drinking.

Therefore, the health of freshly squeezed fruit and vegetable juice depends on whether someone checks the process. . . . . .
