Investigation Report on Kindergarten Dietary Health Status11Kindergarten Dietary Survey and Nutritional Assessment Preschool children are at a critical stage of growth and development, and their nutritional diet status is of great significance for ensuring children's physical and mental development, preventing diseases and long-term health. In recent years, great changes have taken place in China's dietary structure, dietary behavior and food processing methods. In order to know the nutritional diet level of kindergarten children in the jurisdiction, it is necessary to carry out targeted catering for kindergarten children.
1.2 dietary guidance, and dietary surveys were conducted in three kindergartens within the jurisdiction.
2. 1 intake of main nutrients
According to the analysis of management and nutrition, the average intake of various foods per person per day is calculated, and the supply of main nutrients is shown in table 1.
Internal data are China Food Composition Table 2002 and Reference Intake of Dietary Nutrients for China Residents published by China Nutrition Society.
It can be seen that the nutrient intake of calories, protein and iron reaches or exceeds ROA. Calcium, zinc, retinol, VB 1 and VB2 are all insufficient intake of trace elements and vitamins, especially iron. There is no significant difference in the per capita intake level of major nutrients between urban and rural areas and between public and private kindergartens.
2.2 nutrient heating situation
Judging from the heating situation of nutrients, the ratio of fat and sugar in the three nutrients is within the normal range, and the heat in protein obviously exceeds the recommended ratio.
2.3 Food sources
3 discussion
3. 1 This nutrition survey shows that all three kindergartens can manage their children's diets by adopting recipes, and the dietary nutrition level can basically meet the needs of preschool children's growth and development, and the problems of lack of calories and protein are basically solved. There is no significant difference in kindergarten dietary level between urban and rural areas and between the nature of running schools. Facts have proved that the recipe with quantity is an effective means to manage nutritious meals in kindergartens. The main problems of dietary nutrition in this area are: trace elements. Vitamin deficiency and high supply rate in protein.
3.2 The lack of trace elements seriously endangers children's health and causes mental damage. Insufficient intake of iron and zinc, as a long-standing nutritional problem, is still widespread in this survey. The iron intake of the two kindergartens is lower than the recommended amount, which is 36.38% and 35.29% respectively. The zinc intake of 34/kloc-0 children in 3 kindergartens is insufficient, accounting for 23.66% of the investigated population. Lack of vitamins often endangers the immune system. Not in the unit under investigation
The deficiency of retinol, Vb 1 and Vb2 is the same. Therefore, effective measures must be taken to prove and correct this nutritional deficiency.
3.3 The new trend of this survey is the high supply ratio and insufficient intake of Chinese fruits and vegetables in protein. On the one hand, it shows that the living standards in the region have improved and there are more meat and vegetables? ; On the one hand, the dietary nutrition structure of kindergartens is still unreasonable. The nutritional value of food protein depends largely on the quantity and proportion of eight essential amino acids contained in food. Only when the quantity and proportion are close to the needs of human body can human tissue protein be synthesized. Otherwise, it will affect the utilization of food protein. When the heat supply of protein is too high, it will affect the normal function of protein, cause protein consumption and affect the nitrogen balance in the body. In addition, high-protein diet is closely related to hypertension, obesity and cardiovascular diseases in young children. Therefore, it is necessary to reduce the total intake of protein, and reasonably increase the intake of high-quality protein and fruits and vegetables.
3.4 Children's health, growth and development depend on the supply of adequate nutrition. The results of this nutritional survey show that there are still common problems in the nutritional structure of kindergartens. The guidance of health care institutions to kindergartens should be thorough and specific, and the professional knowledge and skills training of kindergarten health care teachers and canteen operators should be strengthened. Health care teachers, in particular, are the makers of quantitative recipes, and the level of quantitative recipes determines the basic level of kindergarten meals. We should re-recognize the importance of canteen operators. They are the implementers of metrological recipes, responsible for food procurement, quality control and specific processing. Its professional level is closely related to the level of dietary nutrition. We are going to gradually introduce the concept of nutritionist into kindergartens, and regularly carry out nutrition investigation and training in kindergartens, so as to truly achieve accurate recipes and comprehensive, balanced and appropriate dietary nutrition structure.
