The commonly used physical and chemical indexes for evaluating whether edible oil meets the national hygiene standards are peroxide value and acid value. The peroxide value exceeds the hygienic standard, indicating that the oil is not fresh; The acid value exceeds the hygienic standard, indicating that the oil has been or has been rancid.
On the basis of referring to the classic methods of textbooks, the test strip products developed by this kit can semi-quantitatively detect the rancidity index in a few minutes. At present, the inspection indexes of edible oil rancidity in China's food hygiene supervision and management departments are mainly acid value and peroxide value, and the method adopted is the national standard GB/T 5009.37- 1996 analysis method. The national standard analysis method of these two indicators needs to prepare reference materials about 15 days in advance, and the operation is complicated. It takes 20 minutes to test an index, and the material cost is about 30 yuan. Therefore, it is very difficult to popularize this method in a wide range of edible oil hygiene supervision. In order to change this situation, realize convenient and effective monitoring and management of edible oil quality, and protect people from the harm of inferior oil, the developed test paper for rapid detection of edible oil rancidity can complete semi-quantitative detection of acid value and peroxide value in edible oil within 3 minutes.
The product was tested by the Food Hygiene Supervision and Inspection Institute of the Ministry of Health, and the test results were basically consistent with the national standard GB/T 5009.37- 1996 analysis method. The test paper for rapid detection of edible oil rancidity is suitable for comprehensive on-site rapid screening of edible oil, and provides a convenient, practical, economical and effective method and means for strengthening the supervision and management of edible oil market and catering industry.
1. Scope of application
This method is suitable for rapid and quantitative determination of acid value and peroxide value in edible vegetable oil.
2. Principle of action
The free fatty acid produced by rancidity of edible vegetable oil reacts with the reagent in the test paper to reflect the rancidity degree of oil. The peroxide produced by the oxidation of edible vegetable oil reacts with the reagent in the test paper to reflect the oxidation degree of oil.
3. Experimental materials
Quick test card: sealed package, the test paper taken out of the package should be used within 10 minutes, and the opened test paper should be used within 1 month. If there is a red mark on the acid value paper and a gray mark on the peroxide value paper, the paper has been polluted or has failed.
3. Business methods
Take an appropriate amount of oil sample in a clean and dry container. Insert the end of the drug-containing test paper into the oil sample 1~2 seconds, take it out immediately, and start timing.
Note = = = The best reaction time of acid value test paper is 5 minutes, and the colorimetric method is effective within 3 ~ 8 minutes.
