1, site selection

Winery should be located in non-toxic, free of all kinds of pollution sources and other places that may affect the health of wine production.

2. Factory area and roads

The winery must have a clean environment, the factory area should be greened to minimize the bare area, the green belt should be planted with evergreen shrubs and flowers, and it is not suitable for planting flotsam and fragrant flowers in the production area, so as to avoid the wine from being contaminated and affected.

The layout of the factory should be divided according to administrative, living, production and auxiliary systems. The administrative and living areas should be separated from the production area by a certain distance and be on the upwind side of the dominant wind direction.

The main roads in the plant area should be wide and smooth, so that the human flow and logistics of the road separate or fixed direction to ensure safety and cleanliness. The road surface of the factory and the main road into the factory should be paved with concrete, asphalt, stone and other materials that are not easy to get dusty, and the road surface should be flat and free of stagnant water, and there should be sufficient drainage facilities.

The environmental sanitation of the winery must be in accordance with the provisions of the Environmental Protection Law of the People's Republic of China*** and the State.

3. Microbial culture room and filter-washing cotton processing room

Plant and facilities must be suitable for the characteristics and requirements of wine production, reasonable layout, the area and space of the plant must be compatible with the production capacity, the building structure and decoration should be conducive to cleaning and maintenance, the plant should be provided for the maintenance period.

4. Production workshop

The production workshop should be reasonably laid out according to the process flow, avoiding repeated round trips and preventing cross-contamination and mixing of raw materials, semi-finished products and finished products.

The ground should be non-absorbent, impermeable, non-slip, corrosion-resistant and non-toxic material pavement, no cracks and easy to rinse and disinfect. The ground should have 1% to 2% slope and drainage system to ensure smooth drainage, no water on the ground; workshop sewer should be reliable liquid sealing device.

Walls should be made of impermeable, non-absorbent, washable, impermeable materials, the surface should be smooth, no cracks, and painted light-colored, non-toxic, not easy to peel off, easy to clean, disinfect, sterilize the paint. The corners of the walls should be curved.

Doors shall have smooth and non-absorbent surfaces, close tightly, and be equipped with fly prevention facilities such as screen doors, screens, water curtains and air curtains according to the actual needs of each workshop.

Ceilings should be able to prevent dust accumulation, mold growth and material flaking, and should be easy to flush and free of condensation.

5, warehouse

The floor and walls of the raw materials storage warehouse should be constructed of cement or other impermeable materials, the warehouse must be clean, dry, and fire, moisture, rodent, insect and proper ventilation.

6. Water supply system

SICOLAB believes that the winery should have enough water for domestic use in accordance with the provisions of GB5749, and if necessary, it can be equipped with reserve water equipment, and the water storage equipment should be equipped with anti-pollution measures.

Water used for cooling, fire-fighting, refrigeration and other water that does not come into contact with wine must be transported in separate pipelines and must not be cross-connected with the potable water system, and clearly colored eye-catching signs must be set up at appropriate locations in the pipelines to distinguish them from the production water (including potable water) pipelines.

The use of recycled water must be accompanied by appropriate technical measures to ensure that the water quality reaches the prescribed standards.

7, wastewater, waste gas treatment system

The factory must have wastewater, waste gas treatment system, and often check, repair, maintain good working condition, wastewater, waste gas emissions should be consistent with the provisions of GBJ4.

8, locker room

The factory must have a locker room appropriate to the number of production workshops, locker room should be connected to the workshop, and lockers.

Toilets and bathrooms

The factory shall have toilets and bathrooms appropriate to the number of workers, and the toilets and bathrooms shall be appropriately located, clean and hygienic, with no bad odor, and the doors and windows do not open directly to the production workshop. Toilets must be installed screen windows, screen doors, the floor should be flat, easy to clean, disinfection, should be flushed and have hand-washing facilities; the water door switch should be foot-operated, wainscoting should be light-colored tiles or impervious to the corresponding material masonry.

9, hand-washing and disinfection facilities

Production area scrub room should be equipped with a foot pedal hand-washing equipment and hot and cold water, warm air blow-drying equipment (or paper towels), available for scrubbing detergent and disinfectant, and set up a receiving box for waste paper, and often to maintain hygiene.

10, lighting

The factory should have enough lighting and natural lighting, the workshop lamps and lanterns need to install a safety shield, fermentation, filling, packaging workshop and finished product storage should use explosion-proof lamps. Each inspection process can be added local lighting.

11, ventilation, dust

The production workshop should have good ventilation and dust removal facilities to maintain air circulation, temperature and humidity appropriate. Where the use of steam or cooking heating workshop should be set up local exhaust equipment, where more dusty sections should be installed effective dust removal and ventilation equipment.

12, waste storage facilities

The factory should be away from the production plant in a suitable location to set up waste storage facilities, the facility is closed, easy to clean, and can effectively prevent pest breeding and contamination of raw and auxiliary materials, water.
