Extended data:
Fresh sausage is a kind of sausage product with fresh meat stuffing as the main body and aimed at eating within 2-4 days. Because its purpose is not storage, there is no need to use nitrate.
Raw meat is generally pork-based, with leg meat and hip meat as the best, and subcutaneous fat on the back is generally used as fat. Grind the meat into small particles with a meat grinder, put it into a mincer, add spices, chop and stir for 2min, and then add water according to the state of the meat. Add oil and stir for about 1min. The stirred meat is poured into the casing with an enema machine, usually packed into small-caliber artificial, cellulose or collagen casings, soaked in liquid fumigant and sold as raw pork sausages.
