Classification of Qu Liquor
1, Daqu liquor:
Daqu was used as saccharifying starter, and the raw materials of Daqu were mainly wheat and barley, plus a certain amount of peas. Generally, it is solid-state fermentation, and the quality of Daqu liquor is good, and most of the famous wines are Daqu.
2, Xiaoqu wine:
Xiaoqu takes rice as raw material, mostly semi-solid fermentation, and southern liquor is mostly Xiaoqu wine.
3, bran koji wine:
Pure cultured Aspergillus and pure cultured distiller's yeast were used as saccharifying starter, and the fermentation time was short. Because of the low production cost, it is adopted by most wineries, and this type of wine has the largest output. Take the public as the object of consumption.
4. Mixed wine:
Mainly Daqu and Xiaoqu mixed wine.
