Are those sashimi healthy to eat raw?

There is a saying that salmon contains a lot of parasites, which seems to be frozen to death.

When eating raw fish, many people think that dipping mustard and vinegar can kill parasitic fish. But research shows that this statement is incorrect. Wrong eating habits lead to many diseases. According to the report of the health department, the infection rate of clonorchiasis in China increased by 75% on average compared with 15 years ago, especially in Guangdong, Guangxi and Jilin, which increased by 65,438 0.82%, 65,438 0.64% and 63% respectively.

Experts pointed out that people's health awareness has improved to a certain extent, but their understanding of health is still insufficient.

Zhang Nian, a nutritionist at Foshan Traditional Chinese Medicine Hospital, said that there are nearly 90 kinds of parasites in fish, shrimp and crabs along the coast of China, and uncooked aquatic products such as fish and shellfish often contain pathogenic microorganisms and parasites.

In response to the saying that "mustard kills parasites", Zhang Nian pointed out that raw fish dipped in mustard and vinegar can't kill parasites, and many parasites have to be heated in hot water at 70 degrees Celsius for a period of time to kill them.

Zhang Nian told reporters that mulberry trees are widely planted on the banks of fish ponds in the Pearl River Delta region adjacent to Guangdong. Residents are used to dumping human and animal feces in mulberry base, which makes cultured fish easily infected with clonorchiasis. Therefore, common grass carp, herring, perch and shrimp may contain clonorchis sinensis, which must be cooked before eating.
