According to historical records, Zhang Jiashan's hollow handmade vermicelli is "straight through the stem, delicious and delicious, each for its own supplement." The so-called "straight through the stem" means that every cross section of the vermicelli has needle-like holes, hence the name. Because Zhangjiashan handmade vermicelli is made of high-quality flour, it is smooth and resistant to cooking, and it does not muddy the soup after cooking. Processing hollow vermicelli is a tiring job, and there are more than a dozen processes, large and small, which can't be sloppy at all. The whole production process takes about 20 hours to complete. The processing flow is roughly divided into kneading dough, shading surface, cutting surface, rubbing large strips, rubbing two strips, wire, putting chopsticks, shading strips, dividing chopsticks, re-shading strips, taking chopsticks out, putting them on a shelf, drying and sealing.
