Choose healthy chickens:

Healthy chickens, full of energy, tight and oily feathers; Eyes are bright and flexible, and eyeballs fill the entire eye socket; The crown and mustache are bright red, the crown is straight and the mustache is soft; The wings are close to the body and the hair is shiny; Powerful claws and free movement. Sick chickens do not have the above characteristics. Some chickens touch the chicken breast and crop with their hands, feeling flatulence or eating hard objects; You can't buy unstable things.

Choose tender chicken:

Identification of chicken tenderness mainly depends on chicken feet: feet are thin and have no sense of rigidity; Wear of little toe; The short protrusion between the ankles is a tender chicken.

Choose free-range chickens:

We all like to make chicken soup with free-range chickens (also called chai chicken, grass chicken and native chicken, which are farmers' chickens). From the feet, we can see the identification method: the claws of free-range chickens are thin and sharp, rough and powerful; The chicken feet in the circle are short, the claws are thick and the back is round and fleshy.

Distinguish between live slaughter and dead slaughter:

If you buy a slaughtered chicken, you need to pay attention to whether it was slaughtered after death: if the butcher's knife edge is uneven, it means that the live chicken is slaughtered; The knife edge is flat, even there is no knife edge, the bleeding is not good, there is residual blood, and the blood is dark red, which can be considered as a chicken slaughtered after death.

Identify water-injected chickens:

If you find that there is a red needle tip behind the chicken wings and the surrounding is black, it must be a water-injected chicken; If you pinch the chicken's cortex with your hand, it obviously feels slippery, and it must be watered.
