1. First adjust the ratio of a piece of black tea fungus to a catty of water, and then wrap the tea and sugar with sterile gauze. A kilo of water needs about 2, 5 to 5 grams of tea leaves and 50 grams of sugar, and then put it into the water with adjusted proportion to boil.
2. After boiling, when the tea syrup cools to below 40 degrees, take out the gauze wrapped with tea leaves and sugar, and then pour the tea syrup into the sterilized glass bottle. Note: at this time, you can't fill the glass bottle, but fill it about three quarters, leaving some space and air.
3. Pour all strains of black tea fungus into glass bottles, seal the bottle mouth with clean and disinfected gauze, tie the bottle mouth with a rope, and keep it in a well-lit place.
4. Kombucha will ferment according to the temperature. High temperature takes a short time and low temperature takes a long time. Generally, it takes about four days from 25 to 30 degrees, six days from 15 to 25 degrees and eight days from 15 degrees.
