The production process of fermented liquor is very simple, just need to prepare raw materials and fermentation utensils. The following are the production steps of mash:
1. Prepare glutinous rice, glutinous rice wine koji, water and sugar.
2. After the glutinous rice is washed, add appropriate amount of water and sugar and mix well.
3. Add the glutinous rice koji into the evenly stirred glutinous rice and continue to stir until the glutinous rice is completely covered.
4. Pour the mash into a fermentation vessel, cover it and put it in a cool and ventilated place for fermentation.
5. The fermentation time is usually 3-5 days, and it needs to be stirred once a day during the fermentation process to prevent the sticky rice from becoming moldy.
