The history of clinical nutrition, or the research on the relationship between health and how people ingest and use food, can be divided into four different eras: the first era began in the19th century and lasted until the early 20th century, when people realized for the first time that food contained ingredients necessary for human functions, and different foods provided different amounts of essential substances. At the end of this era, research shows that rapid weight loss is related to nitrogen imbalance, which can only be corrected by providing adequate dietary protein related to certain foods.

The history of medical nutrition, or the research on the relationship between health and human body's absorption of food nutrition, can be divided into four different periods: the first period began in the19th century, and at the beginning of the 20th century, it was first discovered that food contained essential nutrients for human body, and different foods provided different amounts of ingredients. At the end of the first phase, it was found that the rapid weight loss was closely related to nitrogen and inequality, and only by providing adequate nutrition in food could it be alleviated.

The second era began in the early 20th century, which can be called "vitamin period". People began to realize that food contains vitamins and described the deficiency syndrome. As vitamins are considered as essential food ingredients for health, people tend to think that every disease and condition that has not been effectively treated before may respond to vitamin therapy. Since then, medical schools have become more and more interested in integrating nutrition concepts into basic science courses. This kind of education focuses on the understanding of vitamin deficiency. This is the beginning that the value of nutritional therapy in medicine finally changed from ignorance to denial. Recklessly claiming that the effect of vitamins far exceeds the actual effect of using vitamins.

The second period is considered as the beginning of the twentieth century, which can be called the vitamin period. Vitamins were found in food and the symptoms of deficiency were described. When vitamins are considered as essential ingredients in food, people begin to guess that every disease is related to insufficient vitamin supply. During this period, medical schools began to be more inclined to add some concepts of nutrition to basic science. The focus of medical education is mostly on the cognition of symptoms of vitamin deficiency.
