Ingredients: 200g lean pork, flour 1 00g, starch 40g+10/0g, egg 1 piece, cooking wine1spoon, salt, 2 pieces of garlic, fresh soy sauce, spiced powder or thirteen spices.
Gourmet practice:
1, cut the meat into finger-shaped strips, add soy sauce, cooking wine, thirteen spices, garlic slices and 10g starch (about 1 spoon), and marinate for more than 1 hour. Marinate it the night before and put it in the refrigerator for use the next morning.
2, flour+starch+thirteen spices+salt+eggs+water, and batter. Don't be too thin
3. Mix the meat strips with the batter, constantly stirring, so that each meat strip is covered with batter.
4. Put more oil in the pan. I use a 20cm caliber milk pan, and the oil height is about 1.5cm. If the fire is medium, the oil temperature must be very high. Then put the meat strips wrapped in batter into the oil pan one by one and fry them.
5. After all frying, pour into the oil pan and fry again. Fried crispy meat won't soften. Crispy outside and tender inside, super delicious.
Steamed spareribs with black bean sauce
Ingredients: 400g sparerib, 3g lobster sauce, 3 cloves of garlic, ginger 1 slice, and various marinades of sugar/salt/oil/starch/cooking wine.
Gourmet practice:
1, 400g small rows of thawing soaking water, let stand for half an hour to remove blood water, and then dry the surface water with paper.
2. Add 1 tbsp salt to make it sticky, then add 2 tbsp sugar and corn starch to make it sticky, pour tap water, let it stand for 1 hour, wash it with water, and then dry it with paper.
