Is freeze-dried food really nutritious?

The full name of freeze-drying technology is "vacuum freeze-drying technology", which is to dehydrate and dry foods frozen at-10~50℃ in vacuum. In fact, freeze-drying technology is not new. As early as 1960s, it was used to develop space food for astronauts.
The food made by freeze-drying technology not only has good color, fragrance, taste and shape, but also retains the nutrients such as vitamins and protein. You can eat it directly or process it slightly, and it will be fresh in a few minutes.

Of course, if you have more time or convenience to buy fresh fruits and vegetables, you'd better choose fresh agricultural products.
What's the difference between freeze-dried food and dehydrated food?
Freeze-dried food and dehydrated food are quite different in production technology and variety characteristics:
Freeze-dried foods actually adopt the process of rapid freezing and vacuum sublimation, while dehydrated foods (such as vegetables in instant noodle seasoning packages are typical dehydrated foods) often adopt the process of promoting water evaporation in foods under manual control, including natural drying (sun drying, air drying, shade drying) and manual drying (oven drying, baking room drying, mechanical drying and other drying).
Freeze-dried food often retains most of the color, aroma, taste and nutritional components of food, and its appearance has not changed much. It can be preserved for a long time without preservatives, and it can retain some vitamins and minerals to a great extent, but compared with fresh fruits, it often lacks some vitamins, such as easily decomposed vitamin C;
However, the color, flavor and nutritional components of dehydrated food often change, and its rehydration is poor. Dehydrated foods tend to decompose vitamins and minerals more easily during storage, so their nutritional value is not as good as that of freeze-dried foods.
