Fried fritters can expand after being fried because some kind of expansion agent, usually alum, is added in them, which is an acidic complex noodle. Baking soda is alkaline when it meets water, and it will react chemically when it is dissolved in water, producing a lot of carbon dioxide and flocculent substances, thus making the dough fluffy. Moreover, this reaction will react quickly at high temperature and produce a large amount of carbon dioxide gas. However, fried dough sticks can not be used for a long time, because the leavening agent contains certain metal elements, which will have a negative impact on the human body and even lead to metal poisoning if ingested in large quantities. Therefore, frying fried dough sticks with washing powder is fake.
