Ingredients: 280g of toast flour, 0/50g of homemade sticky yogurt/kloc-,30g of egg liquid, 28g of unsalted butter, 3g of yeast, 45g of sugar, 3g of salt, and a little black and white sesame seeds (for decorative design).
Step 1: Add homemade sticky yogurt, egg liquid, yeast, sugar, salt and high-gluten flour into the barrel of a bread machine or a dough mixer, stir for a while without losing powder, add softened salt-free butter, and stir the dough with a second-grade bread machine. Naturally, there would be no equipment for rubbing by hand.
The flour I used in the second step is toast flour, which is actually high-gluten flour. Yogurt is made at home, without sugar. It is very sticky. If you use yogurt on the market, you should also choose real yogurt instead of yogurt drinks. The yogurt you bought has a high sugar content, so you can reduce the sugar appropriately. I didn't sprinkle the egg liquid, but put an egg yolk directly, which is almost the same.
The third step is to get a balanced and smooth dough. The kneading time is irregular. If the general equipment is more intimate, 15 minutes can be checked. Take a small piece of dough and spread it gently to get a strong plastic film that is not easy to crack. There is no need for the film to come out of the snack bag, and there is no need for the glove film like making toast.
Step 4: Knead the dough without fermentation, immediately divide it into 12 equal parts and roll it into a circle. It doesn't need any technical content at all, just a circle. Is it particularly simple? Pad a paper tray in the mold. Non-stick mold can be used without pad. I think it is more convenient to clean the belt with pad. More importantly, it looks very tall, hehe!
Step 5: Knead the dough into the mold and put it in a warm and humid place for fermentation. Now the weather is hot and the fermentation is rapid, about 35 degrees, about 30 ~ 40 minutes. The dough is about twice as big as the mold. Brush the remaining protein solution and sprinkle with a little white sesame decorative pattern. Better heating electric oven 170 degrees 18 minutes to bake up and down, they will grow taller. When the time is up, announce the refrigeration immediately. Take out the paper tray immediately, let it cool, seal it at room temperature, and eat it within three or four days. If you want to store it for a long time, freeze it.
