Paper-skinned walnuts have a high kernel yield, especially Xinjiang paper-skinned walnuts, with a kernel yield of over 70%. However, the walnut oil content of paper-skinned walnut is low, and its taste and nutritional value are slightly weaker than other kinds of walnuts. However, because the paper walnut shell is too thin, the loss is large, and once it encounters rainy days, it is prone to problems such as water ingress and mildew.
Second, thin-shell walnuts
Although thin-shelled walnuts are called thin-skinned, the shell thickness is 1- 1.5mm, and the shell is still hard and cannot be broken by hand, so you need some help when peeling. Its inner pleat wall is leathery or membranous, which can be half kernel or whole kernel. The kernel yield is 50%~59.9%, and the taste and nutritional value are slightly better than that of paper walnut.
Third, thick-shelled walnuts.
Thick-shelled walnut has a very thick peel, the shell thickness is above 1.5 mm, and the ossified inner pleated wall, also called "sandwiched walnut", is the most difficult one of the three kinds of walnuts to peel. It must be assisted by tools such as walnut pliers, and only nuts can be broken, and the kernel yield is below 50%. However, the nutritional value of thick-shelled walnuts is higher than the first two kinds, and the walnut oil content of nuts is sufficient, and the taste is of course better.
How to choose walnuts? 1. Look at the color of walnuts. The epidermis is light yellow. The appearance is bright and white, which may be bleached. Purchase is not recommended. Really naturally dried walnuts will be slightly yellow and have a reflective texture, so the whiter the better. If the surface is black, it means that it has been left for too long, and the oil inside has been rancid and degenerated to the epidermis.
2. weigh the walnuts. It feels a little heavy, and the nuts inside don't move, indicating that its nuts are full and good quality walnuts. However, if the walnut feels particularly light in your hand and the pulp inside is disturbed, it means that the nut of this walnut is particularly small or has gone bad, so it is not easy to buy and eat.
3. smell it. Good quality walnuts will give off a faint walnut fragrance. If you find that the walnut smells bad, it means that this kind of walnut is not very fresh, or it has gone bad and is not suitable for buying and eating.
