Legal analysis: canteens in primary and secondary schools and kindergartens should keep samples of each food product processed and produced for each meal, and the sample retention amount of each variety should meet the inspection needs, not less than 125g, and record the name, sample retention amount, sample retention time and sample retention personnel. Food samples should be kept by the counter for more than 48 hours. For large-scale collective dining activities processed and produced in the canteens of colleges and universities, samples of hot food, hot food not ready for immediate sale, cold food, raw food and decorative cakes made and sold in batches shall be kept in accordance with the provisions of the preceding paragraph, and samples of other processed foods shall be kept in accordance with the relevant provisions.
Legal basis: Article 24 of the Food Safety Law of People's Republic of China (PRC) shall formulate food safety standards, which shall be scientific, reasonable, safe and reliable for the purpose of safeguarding public health.
