The secret recipe is rice wine, which is called mash in the south. Take a proper amount of flour, half dilute it with warm water, and add rice wine, salt and alkaline noodles.
The general ratio is to add one or two pieces of rice wine, half a spoonful of salt and one spoonful of alkaline noodles to each catty of noodles.
Add the lid and put it in a warm place (about 30 degrees Celsius) for four hours, if it is sweet and slightly sour.
