Taking three common dishes as examples, Suzhou University studied the overnight dishes, and found that the nitrite content was different under different storage conditions and different time points.
As can be seen from the above table, although the nitrite content in food increases gradually with the increase of storage time, the measured nitrite content is less than the intake standard. Moreover, the nitrite content of dishes stored at 4℃ is lower than that of samples stored at room temperature.
Therefore, the risk of "overnight food causing cancer" or even "poisoning death" cannot be eaten by eating an overnight meal. But it is not recommended to eat a lot of overnight dishes for a long time.
Compared with carcinogenesis, we should pay more attention to the nutritional value and bacterial pollution of overnight dishes.
