Sister Ma, why is the earth chocolate so bitter?

Why is pure chocolate so bitter?

1. The cocoa butter content is high.

Little friends who have eaten chocolate should know that the main ingredient of chocolate is cocoa butter, but cocoa butter includes pure natural cocoa butter and cocoa butter substitute. Pure natural cocoa butter is ground from natural cocoa beans, while cocoa butter substitutes are artificially synthesized. Therefore, if the natural cocoa butter content of pure chocolate noodles reaches 50%, or even 80~90, then the taste of pure chocolate must be bitter. On the contrary, if the cocoa butter content is low, the bitterness will be reduced.

2. Low sucrose content

When making chocolate, in addition to cocoa butter, a food additive, sucrose, is actually added. Sucrose is mainly used to control the taste of chocolate. If the chocolate you eat is sweet, it means there will be more sucrose in it. On the contrary, the pure chocolate you eat is bitter because there is little sucrose in it, and some even don't put sucrose directly. Others put xylitol for health, which will not be so sweet, so it will be bitter to eat.

3. High purity

When making chocolate, the purity of chocolate will also affect the taste. If the purity is high and no other ingredients are added, the pure silky chocolate will taste a little bitter. If the purity is not high, adding some other ingredients such as nuts or fruits will be sweeter, so the purity also determines her taste.
